Hello, my VOH Buddies!
Spring is popping, and so is our garden—yay! I’m so excited to introduce a superstar veggie we’re growing right here at VOH. It’s fresh, flavorful, and seriously delicious—meet green garlic (aka garlic scallions)! Harvested early in the season before the bulbs form, it has a mild, slightly sweet, garlicky kick that’s hard to resist.
We whipped up a batch of green garlic pesto at home, and wow… it disappeared fast! We tossed it with pasta and even spread it on homemade pizza—so good. The flavor is like the perfect blend of garlic and onion, which makes it a total must-try for garlic lovers.

This tasty veggie is only around for a short time, so don’t miss your chance to grab some! I also discovered that green garlic pairs amazingly with mushrooms, so that’s definitely going on our menu next weekend. Got any favorite recipes? I’d love to hear them!
Amazing Green Garlic Pesto Recipe:
6–8 shoots of VOH green garlic, roughly chopped
1 cup parsley
2 cups VOH spinach
1 cup parmesan cheese
1/2 cup toasted pine nuts (we tossed in a few walnuts too!)
3/4 cup olive oil
Salt & pepper to taste
Give your green garlic a quick sauté in olive oil for 3–4 minutes to bring out that amazing flavor, then let it cool. Toss everything into a blender and blend until smooth, saving a little olive oil to drizzle on top for that perfect finishing touch.
Store your pesto in an airtight container, and you’ll have this bright, delicious goodness ready to enjoy for up to two weeks in the fridge—if it lasts that long!
