Hello, my VOH Buddies!
Spring is in full bloom, and our gorgeous radishes have been harvest-ready for the past couple of weeks! We hope all of our wonderful VOH friends take the chance to discover fun new ways to enjoy these delicious little gems. A few days ago, my family decided to try roasting our radishes — and wow, were we surprised!
Once roasted, they become mild, sweet, tender, and wonderfully earthy, almost like roasted potatoes, while still being incredibly healthy. We simply sliced them in quarters, tossed them with butter and herbs, and roasted them to perfection. They disappeared from the table in minutes! Honestly, if all our VOH friends start making them at home, we may just sell out every weekend!

I’ve attached photos so you can see just how beautiful and mouthwatering they turned out. We’re already planning to make them again, and even my 92-year-old grandpa — who stopped eating radishes because they used to be too tough — is excited to give them another try.
Roasted VOH Lavish Radishes
Ingredients
2 bunches of VOH radishes
2 TB butter
1 TB chopped parsley
Salt and pepper to taste
Directions
Cut the radishes into halves or quarters. Melt the butter and toss the radishes with the butter, parsley, salt, and pepper. Roast at 400° in the oven or air fryer for about 15–20 minutes, until tender and lightly golden. Enjoy warm!
